If you’re looking for gluten-free desserts, you can’t go wrong with foods that contain flaxseed, and this strawberry flaxseed recipe brings out the flavor of berries with simplicity. Flaxseed has a nutty flavor that’s easily paired with desserts. Flax has been thought to have medicinal properties for years, and recent studies show they can help lower cholesterol. Flaxseed, a seed from the plant Linum usitatissimum, is widely used around the world as medicine and for healing through food.  The seed or the seed oil is used to make medicine.

People use flaxseed for many conditions related stomach problems. It has been proven effective in staving off  disorders of the heart and blood vessels, including high cholesterol, “hardening of the arteries” (atherosclerosis), high blood pressure (hypertension), and coronary artery disease.

Gluten-Free Dream Dessert: Strawberry Flaxseed Shortcake

Ingredients

  • 6 cups fresh strawberries, sliced
  • 1/3 cup sugar (set aside)
  • 3 ¾ cups flour
  • ½ cup ground flaxseed
  • 1¼ cup sugar
  • 2 tbsp baking powder
  • 1 teaspoon salt
  • ¾ cup butter
  • 2 beaten eggs
  • 1 1/3 cups milk

Instructions

Stir together strawberries and 1/3 cup sugar, and set aside. (The sugar will draw juices out the berries.)

Stir together flour, ground flaxseed, 1¼ c. sugar, baking soda and salt. Cut in butter until mixture resembles course crumbs.

Combine eggs and milk; add to dry ingredients, stirring just long enough to moisten. Add a little extra milk if needed to thoroughly moistened. Spread mixture in 9 x 12 baking pan (or two 8-inch pans), building up edges slightly. Bake in 425 degree oven for 16 to 20 minutes. Cool for 10-15 minutes. Top slices with berries. Add whipped cream if desired.
