Potatoes are just better when made from scratch. You know it, and I know it.

Cooking your potatoes from scratch helps you control what goes into them and helps you retain nutrients that are often “zapped out” of processed, prepackaged potato products. Potatoes –before you add the flavors and fats — are quite healthy. A typical potato contains 45% of your daily value for vitamin C, and is more dense in potassium than bananas, spinach, or broccoli. They’re even a great source of B6 (10% DV) and contain trace amounts of  essential minerals like thiamine, riboflavin, folate, magnesium, phosphorous, iron, and zinc.

It’s a great season to try a variety of new potato recipes out, as we brace for what will certainly be much colder weather.

On a chilly day, nothing flavor and aroma of sautéed onions and butter. These toasted onion mashed potatoes are a great addition to a home-cooked meal as the days get colder. The scent will welcome everyone home!

Ingredients

  • 5 medium (about 10 cups) potatoes, cut into eighths
  • Water
  • 2 teaspoons salt
  • 2 tablespoons LAND O LAKES® Butter
  • 3 cups coarsely chopped onions
  • 2 tablespoons LAND O LAKES® Butter
  • 1/2 cup milk, warmed
  • 3/4 cup LAND O LAKES® Sour Cream

Instructions

Place potatoes in 4 1/2-quart saucepan or Dutch oven. Cover with cold water; add salt. Bring to a boil over high heat. Reduce heat to medium; boil potatoes until fork tender (15 to 18 minutes). Drain.

Meanwhile, melt 2 tablespoons butter in 10-inch nonstick skillet until sizzling; add onions. Cook over medium heat, stirring occasionally, until onions are brown (8 to 10 minutes). Set aside.

Place cooked hot potatoes in large mixer bowl. Mash slightly with fork. Beat at medium speed, adding cold butter 1 tablespoon at a time, until mixed (30 to 60 seconds). Continue beating, gradually adding browned onions and all remaining ingredients until well mixed (1 to 2 minutes). Add salt and pepper to taste. DO NOT OVERBEAT. Serve immediately.
