Spinach Tomato and Feta Melt
A quick snack tray is great for a movie night at home or an evening entertaining guests. Spinach, tomato and feta cheese are yummy together along with cream cheese. This spinach tomato and feta melt is great for game day – or any day!
This recipe, courtesy of Triscuit, you can whip up in just 30 minutes. Just make sure you always have a box of crackers on hand and you can always throw together an impressive quick appetizer or snack:

Spinach Tomato and Feta Melt
(The spread can be mixed up to 1 day ahead. Cover and refrigerate until ready to bake as directed).
Ingredients
- 1 package (10 ounces) frozen chopped spinach, thawed, well drained
- 1/2 cup Breakstone’s or Knudsen Low Fat Cottage Cheese
- 1 small tomato, chopped (about 1/2 cup)
- 1/4 cup Athenos Crumbled Reduced Fat Feta Cheese
- Triscuit Rosemary & Olive Oil Crackers (or substitute)
Instructions
Preheat oven to 350 degrees F. Mix all ingredients except crackers until well blended. Spoon into lightly greased 2- to 2-1/2-cup heatproof crock.
Bake 15 to 20 minutes or until heated through.
Serve as a spread with the crackers.
Notes
Any cracker can be substituted.
